Lemon Parmesan Roasted Potatoes & Brussel Sprouts

                            

Ingredients

24 oz small Yukon gold potatoes, sliced in half

16 oz fresh brussel sprouts

1/3 cup olive oil

2 tbsp minced garlic or roasted garlic paste

1 tsp chili flakes

1 tsp Italian seasoning

1 tsp garlic salt

½ tsp harissa seasoning

½ tsp cayenne pepper

Juice of ½ lemon

1 cup freshly grated parmesan

 

 

Directions

1.   Preheat oven to 350 degrees.

2.   In a bowl mix olive oil, lemon juice, garlic paste, and seasonings until well combined.

3.   Pour herb mixture over sliced potatoes and Brussel sprouts and mix until well covered.

4.   Pour potatoes and Brussel sprouts onto covered sheet pan.

5.   Turn potatoes flat side down for optimal crisp.

6.   Bake for 15-25 minutes until potatoes are tender and Brussel sprouts are soft.
